  • 2 pounds sirloin or strip steak, cut into 2-inch cubes
  • ½ pound fresh green beans, trimmed and cut into pieces (broccoli can be substituted)
  • 1 sweet onion, sliced or diced
  • 8 ounces button mushrooms, quartered

For the Herby Olive Oil

  • ¼ cup olive oil (or more as needed) — melted butter works too
  • 2 teaspoons garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional, for a little heat)

This hearty one-pan meal is a weeknight dream! Juicy steak bites, golden potatoes, fresh green beans, onions, and mushrooms are tossed in a garlicky herb olive oil and roasted together until perfectly tender and flavorful. Easy prep, minimal cleanup, and totally satisfying!

Preheat oven to 425°F.

Soften the potatoes: Clean and poke holes in the potatoes with a fork. Microwave for 3–6 minutes to soften slightly (time will vary based on size—larger potatoes need closer to 5–6 minutes).

Dice the potatoes into bite-sized cubes. Smaller pieces will help ensure they cook evenly with the steak.

Tips

  • Par-cook the potatoes for even roasting. Microwaving the potatoes for a few minutes before baking softens them just enough to match the cook time of the steak. This ensures everything finishes at the same time without overcooking the beef.
  • Cut everything into similar-sized pieces. Aim for uniform pieces of steak and veggies so they cook evenly. Dice the potatoes on the smaller side (especially if you like your steak more on the rare side).
  • Use a high-quality cut of beef. Sirloin or strip steak works beautifully for this recipe. They’re tender, flavorful, and roast well without drying out.
