Clean the corn: Remove the husk and silk from each ear of corn.
Add the corn to the air fryer basket.
Spray the corn with cooking oil and season to taste with salt and pepper.
Cook at 400°F for 12-15 minutes, flipping halfway through, until the corn is tender.
At this point you can be done and enjoy your delicious corn, seasoning it to taste. Or you can turn it into Mexican Street Corn with a few easy ingredients.
Remove corn from the air fryer basket and set on a plate. Let cool slightly.
Top each ear of corn with 1 tablespoon mayonnaise. Divide the queso fresco evenly between each ear of corn, crumbling the cheese over top. Season with more salt and pepper to taste, adding smoked paprika and cayenne pepper to taste. Sprinkle over the cilantro and squeeze fresh lime juice over top.
Enjoy right away while warm.
