Cheddar Broccoli Chicken Casserole

This one dish Cheddar Broccoli Chicken Casserole is a full meal in a pan with cheesy, creamy rice, broccoli florets, and juicy chicken. A weeknight staple.

  1. Preheat oven to 350°F
  2. Slice chicken breasts in half horizontally.
  3. Spray the baking dish with nonstick cooking spray.
  4. Add rice, cream of chicken soup, broccoli cheddar soup, and chicken broth to a 9x13 baking dish and mix together.
  5. Next, add the frozen broccoli on top and lay the chicken on top after the broccoli. Nestle the chicken into the rice.
  6. Sprinkle the seasonings all over the dish.
  7. Cover tightly in foil and bake 45 minutes to 1 hour until the chicken is cooked and the rice is tender.
  8. Uncover the baking dish. Fluff the rice and mix it around.
  9. Sprinkle the cheese over the chicken and place back into the oven until the cheese is melted, about 5 minutes.
  10. Serve and enjoy!
