Method

  1. Over medium high heat add the oil to a large pan. Add in the chicken to the pan and cook 5-7 minutes on all sides until browned. It's ok if it's not cook all the way through because it will finish cooking in the sauce later. After it's browned, remove the chicken to a plate.
  2. To the same pan, add in the butter, onion and mushrooms and salt and pepper to taste to taste over medium heat. Continue cooking until the onions are soft and the mushrooms release their water, about 7 minutes.
  3. Add in the garlic, cook 30 seconds. Pour in the chicken broth and Marsala wine. Bring to a boil and cook until the sauce reduces, about 5 minutes, stirring occasionally.
  4. Meanwhile, cook the pasta in salted water according to package directions and drain when finished cooking.
  5. When the sauce starts to reduce, but isn't completely reduced add in the heavy cream and mozzarella cheese. Stir until the cheese melts.
  6. Add the chicken back in to the pan. Continue simmering the sauce until the chicken is fully cooked, about 5 minutes. Add more salt and pepper to taste.
  7. Combine the sauce and pasta and mix together. Garnish with fresh parsley and parmesan cheese.

Notes

Nutrition information is provided as a courtesy and can vary depending on ingredients.
  • Use a dry marsala wine for this, I don't recommend a sweet marsala wine. Find Marsala wine in the grocery store in the wine section. If you can't find marsala wine you can substitute marsala cooking wine.
  • Substitute sherry wine, port, pinot noir, or madeira for the marsala wine.
  • The wine cooks out, leaving behind only the flavor. However, if you are concerned about the alcohol content you can substitute balsamic vinegar, white grape juice, a mixture of red grape juice and cranberry juice, or additional chicken broth for the wine. Just keep in mind that using substitutions will alter the flavor.
  • Store leftovers in the fridge in an air tight container up to 4 days.
