Equipment

  • Large Pan or Pot

Ingredients

  • 6 tablespoons unsalted butter
  • 2 garlic cloves minced
  • 1 tsp garlic powder
  • 2 tbsp all purpose flour
  • 1 1/2 cup heavy cream
  • 1 1/2 cup whole milk
  • 1 1/4 cups parmesan cheese shredded
  • Salt and black pepper to taste
  • 1 pound fettucine cooked, for serving
  • Italian flat leaf parsley chopped, for serving

Method

  1. Melt the Butter: In a large pan over medium heat, melt 6 tablespoons of unsalted butter.
  2. Cook the Garlic: Add the minced garlic and garlic powder to the pan. Stir and cook for about 30 seconds, until fragrant.
  3. Sprinkle in 2 tablespoons of flour and whisk for about 1 minute, allowing the flour to cook through.
  4. Add Cream and Milk: Slowly whisk in the heavy cream and whole milk, ensuring the mixture is smooth.
  5. Continue whisking constantly as you bring the mixture to a gentle boil.
  6. Reduce the heat to low and whisk in the Parmesan cheese until fully melted and the sauce has thickened. Season with salt and pepper to taste.
  7. Add 1 pound of cooked fettuccine to the sauce and toss until the pasta is evenly coated.
  8. Garnish and Serve: Sprinkle with fresh parsley before serving.
