Creamy Bacon Ranch Pasta Salad

Creamy Bacon Ranch Pasta Salad combines crisp bacon, cheddar cheese, tender pasta with peas for a juicy bite with a creamy ranch dressing. A great summer pasta salad for any occasion.

Ingredients
  

  • 8 ounces short cut pasta such as rotini
  • 1/2 pound bacon cooked
  • 1 cup frozen peas thawed
  • 1 cup cheddar cheese cut into small cubes
  • 1/2 tsp parsley flakes
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried dill
  • 1 ounce packet dry ranch seasoning mix
  • 1/3 cup green onions sliced
  • 1/2 cup plain Greek yogurt
  • 1 cup mayonnaise

Method
 

  1. Bring a large pot of water to a boil and cook the pasta according to the package directions. Drain, rinse the pasta in cold water and add it to a large mixing bowl.
  2. Slice the cooked bacon into pieces and the bacon to the bowl with the pasta.
  3. Add remaining ingredients: To the same mixing bowl add the thawed peas, cheddar cheese, all of the seasonings including the packet of ranch and green onions.
  4. Spoon in the Greek yogurt and mayonnaise and mix everything together until well combined.
  5. If the pasta seems dry, add more yogurt or mayonnaise to your preference.
  6. Refrigerate leftovers up to 4 days.

If the pasta salad seems to dry add a bit more mayo or Greek yogurt or 2 tablespoons of milk. 
Try adding rotisserie chicken to bulk up the salad.
