Line the crock pot with foil or parchment paper, leaving enough to hang over the edges. This makes lifting out the meatloaf super easy (and cleanup a breeze!). Do not skip this step or the meatloaf will be very difficult to remove from the slow cooker!
Mix it together: In a large bowl, combine the ground beef, crushed Cheez-Its, cheddar cheese, milk, eggs, red onion, and all the seasonings. Add ⅓ cup of the BBQ sauce, and save the remaining 1 cup for later. Mix gently—just until everything is combined. Overmixing = tough meatloaf, and we want it juicy!
Transfer the mixture into your lined crock pot and form it into a wide, even loaf, leaving a little space (1–2 inches) around the edges for airflow. Cover and cook on low for 5½ to 6 hours, or until the internal temperature reaches 160°F.
Once cooked through, uncover and pour the remaining BBQ sauce over the top. Switch the slow cooker to high and let it cook 20 more minutes, uncovered, to let the sauce get sticky and delicious.
Rest & serve: Use the foil or parchment to lift the meatloaf out onto a platter. Let it rest for 15 minutes before slicing—this helps the juices settle so every bite is tender and flavorful.
