Your slow cooker will do all the work for dinner tonight! This family-favorite Crock Pot Buttery Onion Chicken is a regular on my dinner rotation. Tender, flavorful chicken, buttery potatoes, and perfectly crisp-tender asparagus come together in an all-in-one, dump and cook meal. It’s a set-it-and-forget-it dinner the whole family will love!

Crock Pot Buttery Onion Chicken

An all in one, dump and go dinner the whole family will love

Ingredients
  

  • 2 pounds boneless skinless chicken breast or thighs
  • 2 pounds baby yellow potatoes cut in half
  • 1/2 cup unsalted butter sliced
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 1 ounce packet Lipton onion soup mix
  • 1 pound asparagus spears ends trimmed

Method
 

  1. Lightly grease or line the crock pot with nonstick cooking spray or oil.
  2. Add the potatoes to the bottom of the crock pot, then place the chicken breasts on top. Sprinkle with paprika, black pepper, and onion soup mix.
  3. Lay the butter slices evenly over the chicken and potatoes.
  4. Cover and cook on low for 4 ½ hours or high for 2 hours.
  5. At the 4 ½ hour mark, add the asparagus spears on top of the chicken. Cover and continue cooking for another 15-30 minutes, until the asparagus is crisp-tender.
  6. To serve, plate the chicken, asparagus, and potatoes, then spoon the buttery sauce from the crock pot over the top. Enjoy!

DIY Onion Soup Mix
Whisk together the following ingredients:
  • 1/4 cup dried minced onions
  • 2 teaspoons low sodium beef bullion powder or granules
  • 1 1/2 teaspoons onion powder
  • 1/4 teaspoon celery seeds
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
