Crock Pot French Onion Meatballs

These easy Crock Pot French Onion Meatballs are made with frozen homestyle meatballs, Vidalia onions, savory beef gravy, French onion soup, herbs, and plenty of melted cheese. Serve them over mashed potatoes or rice for an easy family-friendly dinner.

  • 2 Vidalia onions thinly sliced
  • 2 tablespoons olive oil optional
  • 28-32 ounces frozen homestyle meatballs
  • 2 cups low-sodium beef broth
  • 0.87 ounce packet low-sodium beef gravy mix
  • 1 tablespoon balsamic vinegar
  • 10.5 ounce can low-sodium French onion soup
  • 2 tablespoons cornstarch
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon dried rosemary
  • ½ teaspoon black pepper
  • 2 cups shredded Gruyère Muenster, or mozzarella cheese

Method
 

  1. Optional step, for deeper onion flavor, sauté the onions before adding into the crock pot: Heat olive oil in a skillet over medium-high heat. Add sliced onions and cook for about 15 minutes, until softened and browned. Season with salt and pepper to taste.
  2. Add the onions and frozen meatballs to the crock pot.
  3. Whisk together beef broth, gravy mix, balsamic vinegar, French onion soup, cornstarch, thyme, parsley, rosemary, and pepper.
  4. Pour the mixture over the meatballs.
  5. Cover and cook on LOW for 5 hours or HIGH for 3 hours.
  6. Check the gravy consistency. If you'd like it thicker, whisk together 1 tablespoon cornstarch and 1 tablespoon water and stir into the crock pot. (Keep in mind the sauce will thicken upon cooling)
  7. Sprinkle cheese over the meatballs. Cover and cook on HIGH for about 10 minutes, until the cheese is melted.
  8. Serve over mashed potatoes or rice and enjoy!
