Ingredients
- 2 tablespoons toasted sesame oil
- 2 pounds beef round steak sliced into strips
- ½ medium red bell pepper sliced
- ½ medium orange bell pepper sliced
- ½ medium yellow bell pepper sliced
- 1 medium onion sliced
- 2 tablespoons tomato paste
- ⅓ cup hoisin sauce
- 1 tablespoon oyster sauce
- ¼ cup water
- 3 tablespoons all-purpose flour
- ¼ cup low-sodium soy sauce
- 3 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ¼ teaspoon crushed red pepper optional
- Hot cooked rice for serving
Method
- Place the beef in the freezer for about 10 minutes to make it slightly firm and easier to slice. Slice into thin strips against the grain.
- Heat sesame oil in a large skillet over medium-high heat. Sear beef in batches for 4–5 minutes per side. Remove to a plate.
- Add bell peppers, onion, and tomato paste to a 6-quart crock pot.
- In a bowl, whisk together hoisin sauce, oyster sauce, water, flour, soy sauce, garlic, cumin, oregano, paprika, and crushed red pepper.
- Pour the sauce mixture into the crock pot. Top with the seared beef.
- Cover and cook on LOW for 7–8 hours or HIGH for 4 hours, until the beef is tender.
- Serve hot over cooked rice.

Notes
Freeze the beef for 10 minutes before slicing! It firms up just enough to make cutting thin, even strips much easier.
