Ingredients

  • 1 pound lean ground beef
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1.25 ounces packet taco seasoning
  • 10 ounces can Rotel
  • 3 cups cheddar or Mexican blend cheese shredded
  • 1 cup sour cream
  • 9.75 ounce bag Nacho Cheese Doritos gently crushed, or 5 mini bags
  • Garnish: shredded lettuce, sliced olives, taco sauce, hot sauce, diced tomatoes, avocado, green onions, extra sour cream

Method

  1. Preheat your oven to 350°F.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink. Drain any excess grease, if needed.
  3. Stir in the taco seasoning and Rotel, mixing until well combined. Add the sour cream and mix thoroughly.
  4. Assemble the Casserole: Transfer the beef mixture to a 9x13-inch baking dish.
  5. Add half of the crushed Doritos and 2 cups of shredded cheese to the dish. Mix everything together, spreading the mixture evenly.
  6. Sprinkle the remaining cheese and crushed Doritos evenly over the top.
  7. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Top with your favorite toppings, such as diced tomatoes, green onions, sour cream, or guacamole. Serve warm and enjoy!
