Easy Mini Meatballs

These mini meatballs are one of those recipes you'll want to keep in your back pocket. They're easy enough for a weeknight dinner but also perfect for parties and game day. Make a big batch, freeze the extras, and you'll always have an easy meal ready to go!

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper or foil.
  2. Add the breadcrumbs and milk to a large bowl and let them sit for 1-2 minutes to soften.
  3. Add the ground beef, eggs, Parmesan, garlic powder, onion powder, Italian seasoning, salt, pepper, and parsley.
  4. Gently mix everything together with your hands until just combined. Be careful not to overmix—the more you work the meat, the tougher your meatballs can become.
  5. Roll the mixture using a 1-teaspoon measuring spoon and place them on the prepared baking sheet. This recipe should make almost 200 one teaspoon sized mini meatballs.
  6. Bake for 15 minutes, or until the meatballs reach an internal temperature of 160°F.
  7. For spaghetti and meatballs, toss the cooked meatballs with warm marinara sauce and let them simmer for a few minutes before serving.
