Fresh Watermelon Salsa

Salsa is already amazing, but add in some fresh, ripe, juicy watermelon and now it's a party! The Best Watermelon Salsa starts with sweet watermelon, spicy jalapeno peppers, and tart red onion, finished with zesty lime.

Equipment

Ingredients
  

  • 8 cups seedless watermelon diced very small
  • 3 jalapeño peppers deseeded, ribs removed and diced very small
  • 3 garlic cloves minced
  • 1 red onion diced small
  • 3 limes- zest and juice
  • 1/2 cup cilantro chopped
  • 2 tsp Salt plus more to taste

Method
 

  1. Dice the watermelon, jalapeno peppers, and red onion into small pieces. I highly recommend using the small dicer on a veggie chopper to get the same dice on everything.
  2. Chop the fresh cilantro. Mince the garlic cloves.
  3. Zest and juice the limes.
  4. Add everything to a bowl with the salt.
  5. Gently stir until combined. Taste and add more salt as needed.
  6. Serve immediately with tortilla chips or chill for 15–30 minutes before serving for even better flavor.
