Ingredients
  

  • 2 pounds lean ground beef
  • 2 eggs
  • 1 tablespoon fresh parsley chopped, or 1 tsp dried
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon dried oregano or 1 tablespoon fresh
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic minced
  • 1/2 red onion grated
  • 1/2 cup breadcrumbs
  • 1/2 lemon
  • Optional for serving-pita or naan bread diced tomatoes, cucumbers, sliced red onion, tzatziki sauce

Method
 

  1. Preheat oven to 375° F.
  2. In a large bowl combine the ground beef, eggs, breadcrumbs, seasonings, and the juice of half of a lemon. Mix everything together.
  3. Line 1-2 sheet pans with parchment paper.
  4. Using a 1 tablespoon scooper, make meatballs with the mixture and place on the sheet pan.
  5. Bake for 20 minutes, turning halfway through.
  6. Optional- serve meatballs on pita or naan bread with tzatziki sauce, tomatoes, cucumbers and red onion.

Homemade Tzatziki Sauce

Ingredients
  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 1 cucumber, grated and squeezed to remove excess water
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt (adjust to taste)
  • A pinch of black pepper
Instructions
  • Peel and grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible to avoid a watery sauce.
  • In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, lemon juice, salt, and pepper.
  • Stir the ingredients until well combined. Taste and adjust seasoning if needed. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
