Preheat oven to 400°F
Add the chicken to a sheet pan. Cut slits into each of the chicken breasts, about an inch apart, about 3/4 of the way through. Do not cut all the way through.
Spread 1/2 tbsp mustard on each breast. Season with salt and pepper to taste.
Place an apple slice and cheese slice in each pocket using it evenly between all the chicken.
In a bowl mix together the breadcrumbs, salt, pepper, garlic powder, and sage.
To a small pan add the butter over medium heat and when it’s melted add the breadcrumbs mixture.
Toast 30 seconds to 1 minute until golden brown. Sprinkle the breadcrumb mixture evenly over the chicken, between the apples and cheese.
Bake until the chicken is cooked through to 165 degrees internal temperature, about 20 to 30 minutes.
