Ingredients
For the chicken:
- 2 lbs boneless skinless chicken breast (2-4 chicken breasts)
- 3 tbsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp salt
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
For the Avocado Crema:
- 1 ripe avocado
- 1/2 c plain Greek yogurt
- 1 tbsp cilantro
- 1 clove garlic minced
- 1 tsp salt
- 1 tsp cracked black pepper
- Juice of 1/2 lime
- 1-2 tbsp olive oil or water
For the quesadilla:
- 1 low carb tortilla
- 2 tbsp shredded cheddar cheese
- 2 tbsp canned black beans drained and rinsed
Method
- Prepare the chicken: toss the chicken breasts in the oil and seasonings. Air fry at 360° for 10 minutes, flip and cook another 7 minutes. Let rest 5 minutes and shred the chicken.
- Prepare the avocado crema: while the chicken is cooking prepare the crema. To a blender add the avocado, Greek yogurt, salt and pepper, cilantro, garlic, lime and oil or water. Blend until smooth. Add more salt and pepper to taste.
- Assemble the quesadilla. Add 1 tortilla to the air fryer basket. On half of tortilla Top with about 1/4 cup of shredded chicken, cheese, black beans, cilantro and a squeeze of lime juice. (Optional, spray tortilla with nonstick spray) Air fry at 375° for 3 minutes. Top quesadilla with the avocado creams, extra cilantro, diced tomatoes and enjoy immediately.
