Ingredients
- 1 box lemon cake mix
- 1/2 cup butter melted
- 2 eggs
- 1/4 cup lemon juice or 2 tsp lemon extract- divided plus zest
- 1 cup powdered sugar sifted
- 1-2 tbsp milk as needed
Method
- Preheat oven to 350°F
- To a mixing bowl add the lemon cake mix, melted butter, eggs and 2 tablespoons lemon juice or 1 teaspoon lemon extract. Mix with an electric mixer, the batter will be thick.
- Spray a 9x9 baking dish with nonstick spray. Pour the batter into the baking dish and press it evenly.
- Bake 20-25 minutes until a toothpick inserted into the center comes out clean.
- Meanwhile prepare the glaze. In a mixing bowl whisk together the powdered sugar, lemon zest and 2 tablespoons lemon juice or 1 teaspoon lemon extract. If the glaze is too thick add 1-2 tablespoons of milk, a little at a time, to thin it.
- Let the bars cool and pour the glaze evenly over top. Let the glaze set 20 minutes and cut into squares.
