- 1.5-2 pounds chicken breast (4 small or 2 large cut in half lengthwise for thinner pieces)
- 10.5 ounce can cream of mushroom soup
- 1 1/3 cup chicken broth or water *see note
- 3/4 cup long grain rice not instant
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
Method
- Preheat your oven to 375°F.
- Prepare the Baking Dish: Lightly spray a 9x13-inch baking dish with non-stick cooking spray to prevent sticking.
- In a small bowl, mix the seasonings together- salt, black pepper, onion powder, garlic powder and paprika.
- Combine Ingredients: In the baking dish, add the rice, half of the mixed seasonings, water or broth, and cream of mushroom soup. Whisk everything together until well combined and evenly distributed.
- Place the chicken breasts on top of the rice mixture, ensuring they’re evenly spaced. Sprinkle the remaining seasoning evenly over the chicken.
- Bake: Cover the dish tightly with foil to lock in moisture. Bake in the preheated oven for 45 minutes- 1 hour, or until the rice is tender and the chicken is cooked through to an internal temperature of 165°F.
- Remove the foil and fluff the rice gently with a fork to incorporate the juices. Serve the casserole warm, garnished with fresh herbs if desired, for a hearty, comforting meal.
