One Dish Chicken Fajita Pasta Bake

The ultimate easy weeknight dinner! Made with 16 oz dry pasta, chicken breast, bell peppers, onion, fajita seasoning and melted cheese — all baked together in ONE pan. No pre-boiling required! Perfect for busy families, meal prep, and crowd-pleasing comfort food

Ingredients
  

  • 16 ounces dry pasta short cut like bowties, penne or rotini work best
  • 2 large chicken breasts diced into bite-sized pieces
  • 3 cups chicken broth
  • 2 1 oz fajita seasoning packets
  • 2 bell peppers sliced thin or diced
  • 1 small onion sliced thin or diced
  • 1 tablespoon olive oil
  • 1 cup salsa or 1 can Rotel with chilis, undrained
  • 2 cups shredded Mexican blend or cheddar cheese
  • Your favorite toppings like sour cream avocado, shredded lettuce, diced tomatoes, jalapeños, chipotle crema or cilantro

Method
 

  1. Preheat oven to 400°F. Lightly grease a large 9x13 baking dish.
  2. Add to the baking dish: dry pasta, diced raw chicken, sliced bell peppers, onion, both fajita seasoning packets, olive oil, salsa or Rotel, and chicken broth.
  3. Stir well so the seasoning is evenly distributed and the pasta is mostly submerged in liquid.
  4. Cover tightly with foil.
  5. Bake for 40 minutes, or until the pasta is tender and the chicken reaches 165°F internal temperature.
  6. Remove from oven and stir. If needed, return to oven covered for 5–10 more minutes until the chicken and pasta are done.
  7. Sprinkle shredded cheese evenly over the top.
  8. Bake uncovered for 5–8 minutes, until melted and bubbly.
  9. Broil 1–2 minutes if you want a lightly golden top.
  10. Let sit for 5 minutes before serving to thicken slightly.
  11. Add all your favorite toppings and enjoy!
