These Oven Baked steak Bites are quick and easy but also juicy and delicious. It's a great way to stretch steak and the perfect weeknight meal.

Oven Baked Steak Bites

A delicious one dish steak and potatoes dinner the whole family will love.

Ingredients
  

  • 2-3 russet potatoes red or yellow work too
  • 2 pounds sirloin or strip steak cut into cubes
  • 1 sweet onion cubed
  • 8 ounces mushrooms quartered
  • 1 pound fresh green beans trimmed and cut
  • 1/4 cup olive oil more as needed, or substitute melted butter
  • 2 tsp garlic cloves minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes

Method
 

  1. Preheat oven to 425°F.
  2. Soften the potatoes: Clean and poke holes in the potatoes with a fork. Microwave for 3–6 minutes to soften slightly (time will vary based on size—larger potatoes need closer to 5–6 minutes).
  3. Dice the potatoes into bite-sized cubes. Smaller pieces will help ensure they cook evenly with the steak.
  4. Combine everything: In a large bowl, toss the steak, potatoes, green beans, mushrooms, and onions with the herbs and olive oil (or melted butter), until everything is well coated.
  5. Transfer to a baking dish: Spread the mixture in a 9x13-inch casserole dish. Cover tightly with foil.
  6. Bake for 30–40 minutes, or until steak reaches your preferred doneness and potatoes are tender. For medium steak, start checking around the 30-minute mark. For rare, reduce the time slightly. For well-done, bake a bit longer.
  7. Serve hot, garnished with fresh parsley or a sprinkle of Parmesan if desired.
