Pumpkin Spice Chocolate Chip Muffins

Soft, moist Pumpkin Chocolate Chip Muffins made in one bowl! Easy fall baking recipe with warm spice and melty chocolate — perfect for breakfast or snacks.

Ingredients
  

  • 13.25 ounce box spice cake mix
  • 15 ounce can pumpkin puree
  • ½ cup milk
  • ½ cup chocolate chips optional
  • 1 mashed ripe banana OR ½ cup applesauce (optional for extra-moist muffins)

Method
 

  1. Preheat oven to 400°F.
  2. Grease two 12-cup muffin tin or line with paper liners.
  3. In a large bowl, mix together the spice cake mix, pumpkin puree, milk, and chocolate chips.
  4. If desired, add the mashed banana or applesauce for extra-moist muffins.
  5. Divide the batter evenly between the muffin cups.
  6. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Cool for several minutes before removing from the pan.
  8. Tip: Sprinkle a few extra chocolate chips on top of the muffins before baking for an irresistible bakery-style finish!
