Ritz Cracker Mock Apple Pie

Ritz Cracker Mock Apple Pie tastes surprisingly like apple pie without using any apples! Learn the history behind this vintage recipe and make this easy nostalgic dessert with Ritz crackers, cinnamon, lemon, and a buttery crumb topping.

For the Pie
  • 2 cups water
  • 1 cup granulated sugar
  • 2 teaspoons cream of tartar
  • 36 Ritz crackers about 1 sleeve
  • ½ teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 9 inch frozen pie shell
For the Topping

Method
 

  1. Preheat oven to 425°F.
  2. In a medium saucepan, combine water, sugar, and cream of tartar. Bring to a boil over medium-high heat, stirring to dissolve the sugar.
  3. Add the Ritz crackers and continue boiling over medium high heat for 5 minutes without stirring.
  4. Add in the cinnamon and lemon juice. Stir until combined. The crackers will break and look mushy, that's ok.
  5. Pour the mixture into the frozen pie shell.
  6. In a bowl, combine crushed Ritz crackers, brown sugar, cinnamon, and melted butter and stir until well coated.
  7. Sprinkle the topping evenly over the pie.
  8. Bake at 425°F for 15 minutes.
  9. Reduce oven temperature to 375°F and bake another 20–25 minutes.
  10. Let cool for about 5 minutes before slicing.
  11. Serve warm with vanilla ice cream and a drizzle of caramel sauce.

Notes

If your oven runs hot, cover the pie crust with foil when you turn the oven heat down to 375 to prevent the crust from browning too quickly.
A homemade 9-inch pie crust can be used instead of the frozen pie shell if you'd like.
Store leftover Ritz Cracker Mock Apple Pie covered in the refrigerator for up to 3–4 days. For the best texture, let the pie come to room temperature or gently warm individual slices in the microwave before serving. If you want to freeze the pie, wrap it tightly in plastic wrap and aluminum foil and freeze for up to 2 months. Thaw overnight in the refrigerator and reheat gently before serving. For the best results, add vanilla ice cream and caramel sauce just before serving.
