Ingredients
- 2 pounds red potatoes
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tsp onion powder
- 1 tsp paprika
- 2 garlic cloves grated
- 1/2 tsp salt
- 1/2 tsp pepper
- Fresh parsley minced, for serving (optional)
Method
- Preheat oven to 400°F
- Clean and cut the red potatoes into quarters. Place potatoes on a sheet pan.
- Add the the butter to a small bowl and melt in the microwave. To the bowl add in the olive oil and seasonings.
- Pour over the potatoes and mix together until potatoes are well coated.
- Bake 40 minutes, flipping potatoes halfway through cooking.
