Sheet Pan Shrimp Fajitas

Sheet pan shrimp fajitas are healthy, easy to make, and ready in just 20 minutes!

Ingredients
  

  • 1 pound large shrimp, thawed, peeled, deveined and an extra 1/2-1 pound of shrimp for more servings
  • 3 bell peppers large, sliced, any color
  • 1 red onion large, sliced
  • 1 ounce Fajita seasoning packet
  • 2 tbsp olive oil
  • lime juice for serving
  • flour or corn tortillas for serving

Method
 

  1. Preheat your oven to 425°F.
  2. In a large bowl, toss the sliced peppers and onions with 1 tablespoon olive oil and half of the fajita seasoning. Spread into a single layer on a large sheet pan. Roast for 15 minutes.
  3. While the vegetables roast, toss the shrimp with the remaining tablespoon of olive oil and the remaining fajita seasoning until evenly coated.
  4. Remove the sheet pan from the oven and add the seasoned shrimp in a single layer with the vegetables. Return the pan to the oven and bake for 5 more minutes, or until the shrimp are pink, opaque, and cooked through.
  5. Wrap the tortillas in foil and warm them in the oven during the last few minutes of cooking.
  6. Squeeze fresh lime juice over everything before serving. Fill warm tortillas with the shrimp and vegetables, then top with your favorites.

Homemade Fajita Seasoning- Mix together these ingredients:
1 tsp smoked paprika, 2 tsp chili powder, 1 tsp cumin, 1 tsp salt, 1 tsp garlic powder, 1/2 tsp black pepper, 1/2 tsp onion powder
