Ingredients
- 1 pound large shrimp, thawed, peeled, deveined and an extra 1/2-1 pound of shrimp for more servings
- 3 bell peppers large, sliced, any color
- 1 red onion large, sliced
- 1 ounce Fajita seasoning packet
- 2 tbsp olive oil
- lime juice for serving
- flour or corn tortillas for serving
Method
- Preheat your oven to 425°F.
- In a large bowl, toss the sliced peppers and onions with 1 tablespoon olive oil and half of the fajita seasoning. Spread into a single layer on a large sheet pan. Roast for 15 minutes.
- While the vegetables roast, toss the shrimp with the remaining tablespoon of olive oil and the remaining fajita seasoning until evenly coated.
- Remove the sheet pan from the oven and add the seasoned shrimp in a single layer with the vegetables. Return the pan to the oven and bake for 5 more minutes, or until the shrimp are pink, opaque, and cooked through.
- Wrap the tortillas in foil and warm them in the oven during the last few minutes of cooking.
- Squeeze fresh lime juice over everything before serving. Fill warm tortillas with the shrimp and vegetables, then top with your favorites.

1 tsp smoked paprika, 2 tsp chili powder, 1 tsp cumin, 1 tsp salt, 1 tsp garlic powder, 1/2 tsp black pepper, 1/2 tsp onion powder
