Skillet Kielbasa is an easy, full meal made in one pan and ready in just 30 minutes. It's made with rice, kielbasa, chicken broth, broccoli, and topped with cheddar cheese. Perfect for a busy weeknight.

Skillet Kielbasa with Rice

A one pan, full meal of rice, kielbasa, and broccoli topped with melty cheddar cheese, perfect for a busy weeknight.

Ingredients
  

  • ½ tablespoon olive oil
  • 14 ounces Polska Kielbasa sliced (one package)
  • 1/2 yellow onion diced
  • 2 cups frozen broccoli florets
  • ½ teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves garlic minced
  • 1 cup instant white rice uncooked
  • 2 cups chicken broth
  • 2 cups cheddar cheese shredded

Method
 

  1. Preheat oven to 350°F.
  2. In a large oven proof skillet heat the olive oil over medium high heat. Add the kielbasa and brown on both sides , about 4 minutes.
  3. Remove kielbasa to a plate and set aside for later.
  4. Next, add in the onion to the pan and cook 3-4 minutes until it's starting to brown. Add in the garlic, salt and pepper and cook 1 minute.
  5. Pour in the chicken broth. Scrape the brown bits off the bottom of the pan using a wooden spoon.
  6. Then add in the rice, give it a mix, and let the broth come to a boil.
  7. Reduce to a low simmer, cover the pan with a lid and cook 10 minutes.
  8. Uncover, add in the broccoli on top of the rice (don’t stir the rice). Recover and cook another 5-7 minutes until rice and broccoli are tender.
  9. Add the kielbasa back in, stir everything together to combine. Top with the shredded cheddar cheese.
  10. Pop into the oven until the cheese is melted, about 5 minutes.
