Slow Cooker Carrot Cake Oatmeal

If you are a fan of overnight oats, you'll love this Slow Cooker Carrot Cake Oatmeal. It's filled with warm carrot cake flavors and a great make ahead breakfast.

  1. Spray your crockpot very well with nonstick cooking spray or use a crock pot liner
  2. Add in the milk, oats, shredded carrots, maple syrup, brown sugar, salt and spices. Mix well.
  3. Cook on low 4 hours. If you are using steel cut oats, cook up to 6 hours.
  4. Stir in the raisins.
  5. If it’s too thick for your liking, add more milk.
  6. Serve with chopped nuts, shredded coconut and extra maple syrup.

Notes

  • Refrigerate any leftovers and reheat on the stove top or in the microwave. Add more milk as needed when reheating, if the oats become too thick from being refrigerated. 
  • If your crock pot tends to run hot, check your oats at 3- 4 hours, they will probably be done.
  • If you are using steel cut oats, cook up to 6 hours.
  • If you don't like carrots, change up the add ins. Try chopped apples, blueberries or a bag of frozen mixed berries, or any fruit you like in your oatmeal. If using bananas, add those at the end of the cooking time.
  • Add in ground flax seeds for extra fiber.
  • Use a slow cooker liner for easy clean up and no mess.
  • You can freeze oatmeal in individual portions! Freeze up to 3 months. Heat in a saucepan on the stove, from frozen, just add a splash of milk to it.
