Ingredients
- 4 cups milk
- 2 cups old fashioned oats or use steel cut oats, do not use instant or quick oats
- 1 cup carrots shredded
- 1/4 cup pure maple syrup
- 1/2 cup brown sugar
- 1 tsp salt
- 1 tablespoon cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground cloves
- 1 cup raisins
- Chopped nuts and shredded coconut flakes for garnish optional
Method
- Spray your crockpot very well with nonstick cooking spray or use a crock pot liner
- Add in the milk, oats, shredded carrots, maple syrup, brown sugar, salt and spices. Mix well.
- Cook on low 4 hours. If you are using steel cut oats, cook up to 6 hours.
- Stir in the raisins.
- If it’s too thick for your liking, add more milk.
- Serve with chopped nuts, shredded coconut and extra maple syrup.

Notes
- Refrigerate any leftovers and reheat on the stove top or in the microwave. Add more milk as needed when reheating, if the oats become too thick from being refrigerated.
- If your crock pot tends to run hot, check your oats at 3- 4 hours, they will probably be done.
- If you are using steel cut oats, cook up to 6 hours.
- If you don't like carrots, change up the add ins. Try chopped apples, blueberries or a bag of frozen mixed berries, or any fruit you like in your oatmeal. If using bananas, add those at the end of the cooking time.
- Add in ground flax seeds for extra fiber.
- Use a slow cooker liner for easy clean up and no mess.
- You can freeze oatmeal in individual portions! Freeze up to 3 months. Heat in a saucepan on the stove, from frozen, just add a splash of milk to it.
