Place the chicken in the crock pot and season with salt, pepper, and Italian seasoning. Pour in the chicken broth.
Place both pucks of Boursin cheese on top of the chicken.
Cover and cook on low for 5 hours.
Thirty minutes before the chicken is done, bring a pot of water to a boil and cook the pasta according to package instructions. Reserve 1 cup of the pasta water in case you need to thin the sauce.
Add the broccoli to the crock pot and cook for an additional 30 minutes. If using sundried tomatoes, add them in at this time.
Shred the chicken, then stir in the heavy cream and parmesan cheese. Mix well to combine. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.
Stir in the cooked pasta and serve warm.
