Crock Pot Boursin Cheese Chicken Pasta

Comfort food at it's best- Slow Cooker Boursin Chicken Pasta is simply made with chicken and Boursin cheese, which melts into this creamy luxurious sauce and is served with broccoli and fettucine.

Equipment

Ingredients
  

  • 1 1/2 pounds chicken breast
  • 1 cup chicken broth
  • 1 tbsp Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 2 5 ounce Boursin cheese pucks garlic and herb
  • 12 ounces frozen broccoli or fresh
  • 1/2 cup heavy cream
  • 1 cup parmesan cheese shredded
  • 8 ounces linguine reserve 1 cup pasta water
  • Optional: Sundried tomatoes to add in to the dish or to top

Method
 

  1. Place the chicken in the crock pot and season with salt, pepper, and Italian seasoning. Pour in the chicken broth.
  2. Place both pucks of Boursin cheese on top of the chicken.
  3. Cover and cook on low for 5 hours.
  4. Thirty minutes before the chicken is done, bring a pot of water to a boil and cook the pasta according to package instructions. Reserve 1 cup of the pasta water in case you need to thin the sauce.
  5. Add the broccoli to the crock pot and cook for an additional 30 minutes. If using sundried tomatoes, add them in at this time.
  6. Shred the chicken, then stir in the heavy cream and parmesan cheese. Mix well to combine. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.
  7. Stir in the cooked pasta and serve warm.
