The rich, garlicky Boursin cheese melts into a luscious sauce that coats the chicken, fettuccine, and broccoli—giving you a complete meal in one dish. For an extra touch, serve it with a crisp side salad and warm, buttery garlic toast. Perfect for a cozy, satisfying dinner!

Boursin cheese is a soft, creamy, and flavorful cheese that originates from France. It’s made from Gournay cheese, a fresh, spreadable cheese, and is blended with herbs, garlic, and spices to create its signature rich and savory taste.
Boursin has a smooth, spreadable texture, making it perfect for spreading on crackers, stirring into pasta, or using as a dip. It melts beautifully into sauces, adding a luxuriously creamy consistency.

- Slow Cooker– 6-8 quart size
- 1 1/2 pounds chicken breast
- 1 cup chicken broth
- Seasonings- Italian seasoning, salt and black pepper
- 2-5 ounce Boursin cheese pucks, garlic and herb, basil or your favorite flavor
- 12 ounces frozen broccoli – or use fresh
- 1/2 cup heavy cream
- 1 cup parmesan cheese, shredded
- 8 ounces linguine (reserve 1 cup pasta water)
- Sundried tomatoes-optional garnish or add in to the crock pot, this gives great flavor and color!
How to Make It
Place the chicken in the crock pot and season with salt, pepper, and Italian seasoning. Pour in the chicken broth.
Place both pucks of Boursin cheese on top of the chicken.

Cover and cook on low for 5 hours.
Thirty minutes before the chicken is done, bring a pot of water to a boil and cook the pasta according to package instructions.
Reserve 1 cup of the pasta water in case you need to thin the sauce.

Add the broccoli to the crock pot and cook for an additional 30 minutes. Add in the sundried tomatoes at this time, if you are using them.
Shred the chicken, then stir in the heavy cream and parmesan cheese. Mix well to combine. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.

Stir in the cooked pasta and serve warm.

Top with more parmesan cheese, parsley or sundried tomatoes.

Tips
- Substitute Chicken Thighs-use boneless, skinless chicken thighs in place of chicken breasts. Cook on low for 3-4 hours to keep the thighs juicy.
- Reserve Pasta Water – This starchy water helps adjust the sauce’s consistency if it’s too thick after adding the pasta. Reserve 1 cup before draining the pasta.
- Finishing – Add a squeeze of lemon juice over the pasta, a sprinkle of red pepper flakes for kick, extra parmesan cheese, fresh cracked pepper, or sundried tomatoes over top before serving.
- Leftovers – Store leftovers in an airtight container in the refrigerator up to 4 days. Reheat on the stove or in the microwave.

Boursin Cheese Substitutes
Can’t find Boursin cheese? Try one of these alternatives:
- Homemade Boursin Substitute – Mix 8 oz softened cream cheese with 2 tablespoons butter and season with garlic powder, onion powder, dried parsley, dried basil, and a pinch of salt and pepper. Or omit the butter and just use cream cheese .
- Garlic & Herb Goat Cheese – Goat cheese has a tangier taste but works well as a substitute, especially if you like a little extra depth of flavor.
- Alouette Garlic & Herb Spread – This spreadable cheese has a similar texture and flavor profile to Boursin.
- Ricotta + Parmesan + Garlic – Mix whole milk ricotta with grated parmesan and minced garlic for an alternative.
- Mascarpone + Herbs – Mascarpone is extra creamy and mild, so adding some garlic, herbs, and salt makes it a great swap.
