Ingredients
- 2 pounds chicken breasts 3-4
- 14 oz can diced tomatoes with Italian herbs
- 1 cup tomato sauce
- 3/4 cup heavy cream
- 2 tablespoons corn starch
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1/2 tablespoon dried basil
- 1/4 teaspoon black pepper
- fresh basil measure this with your heart
- Grated parmesan cheese for garnish
Method
- Spray your crockpot with nonstick cooking spray, or use a crockpot liner.
- Place the chicken breast on the bottom and sprinkle over the salt, pepper, dried basil, and garlic.
- Pour in the canned diced tomatoes and the tomato sauce.
- Cover and cook on low 3-4 hours until the chicken is cooked through.
- Add the cornstarch to the heavy cream and whisk together. Pour into the crock pot. Stir the sauce, turn off the crock pot, let it sit 15 minutes to thicken the sauce just a bit.
- Top with lots of fresh Basil and parmesan cheese. This chicken dish can be served alone for a low carb dinner or we love it over over spaghetti. Rice or mashed potatoes would be great too!
