Crock Pot Tomato Basil Chicken
Crock Pot Tomato Basil Chicken a delicious and easy dinner with juicy chicken in a flavorful, creamy tomato based sauce. Serve alone for a low carb option or over pasta for a family friendly meal.

This dish is so simple, yet so flavorful. The saucy is creamy and bursting with basil and tomatoes; my favorite flavor combination. We love the chicken over pasta, but it’s also delicious by itself with a big side salad.
The sauce would be great using frozen meatballs in the slow cooker in place of the chicken!
This crock pot tomato basil chicken is a go-to easy dinner idea, perfect for a family weeknight dinner or for company and it can be doubled if you’re expecting a crowd.
What you’ll need
- A 7-8 quart Crock Pot
- Chicken breasts (2 lbs)
- 14 oz can diced tomatoes with Italian herbs
- 1 cup tomato sauce- not spaghetti sauce. The can will read “tomato sauce”
- Heavy cream- if you don’t like cream, you can leave this ingredient out. This is what gives the sauce that rich, velvety taste and texture though. I’ve had some people use coconut milk or almond milk who are dairy free, but keep in mind that will alter the flavor.
- Corn starch-to thicken the sauce
- Seasonings- garlic, salt, dried basil, fresh basil, black pepper
How to make it
The easiest dump and cook recipe!
Always spray your crockpot with nonstick cooking spray, or use a crockpot liner.
Place the chicken breast on the bottom and sprinkle over the salt, pepper, dried basil, and garlic.
Pour in the canned diced tomatoes and the tomato sauce.
Cover and cook on low 3-4 hours until the chicken is cooked through.
Add the cornstarch to the heavy cream and whisk together. Pour into the crock pot. Stir the sauce, turn off the crock pot, let it sit 15 minutes to thicken the sauce just a bit.
Top with lots of fresh basil and parmesan cheese. This chicken dish can be served alone for a low carb dinner or we love it over over spaghetti. Rice or mashed potatoes would be great too!

- 2 teaspoons minced garlic
- 1 teaspoon salt

Instructions
