For me, when the weather warms up, I'm using my crock pot more than ever! One recipe I love to make is Crock Pot Shredded Pork Tacos. It's the easiest meal to throw together using simple pantry ingredients.

  1. Layer the ingredients: Add the diced onions to the bottom of your Crock Pot. Place the pork loin directly on top.
  2. Pour the Rotel (undrained) and chicken broth over the pork. Then sprinkle the taco seasoning evenly over everything.
  3. Cover and cook on low for 6 hours, or until the pork is fork-tender and easy to shred.
  4. Use two forks to shred the pork directly in the Crock Pot. Let it sit for a few minutes so it can soak up all those flavorful juices.
  5. Squeeze fresh lime juice over the shredded pork just before serving to brighten up the flavors.
  6. Serve warm in tacos, burrito bowls, fajitas, or even over rice. Don’t forget your favorite toppings!
