Ingredients
- 3-4 pound pork loin pork shoulder or pork butt can be used
- 1 large red onion sliced
- 1 can Rotel
- 1 cup chicken broth
- 1 packet taco seasoning
- Fresh lime juice
Method
- Layer the ingredients: Add the diced onions to the bottom of your Crock Pot. Place the pork loin directly on top.
- Pour the Rotel (undrained) and chicken broth over the pork. Then sprinkle the taco seasoning evenly over everything.
- Cover and cook on low for 6 hours, or until the pork is fork-tender and easy to shred.
- Use two forks to shred the pork directly in the Crock Pot. Let it sit for a few minutes so it can soak up all those flavorful juices.
- Squeeze fresh lime juice over the shredded pork just before serving to brighten up the flavors.
- Serve warm in tacos, burrito bowls, fajitas, or even over rice. Don’t forget your favorite toppings!
