- 7 quart or larger crock pot- I have this one
- 3-4 pound pork loin or pork shoulder
- 1 large red onion, sliced
- 1 can Rotel, or substitute salsa
- 1 cup chicken broth
- 1 packet taco seasoning
- Fresh lime juice
How To Make It
This easy slow cooker recipe comes together with just a few flavorful ingredients and minimal prep time!
Step 1: Layer the ingredients
Add the diced onions to the bottom of your Crock Pot. Place the pork loin directly on top.

Step 2: Add the flavor
Pour the Rotel (undrained) and chicken broth over the pork. Then sprinkle the taco seasoning evenly over everything.

Step 3: Slow cook
Cover and cook on low for 6 hours, or until the pork is fork-tender and easy to shred.
Step 4: Shred the pork
Use two forks to shred the pork directly in the Crock Pot. Let it sit for a few minutes so it can soak up all those flavorful juices.

Step 5: Add a burst of freshness
Squeeze fresh lime juice over the shredded pork just before serving to brighten up the flavors.
Step 6: Serve and enjoy
Serve warm in tacos, burrito bowls, fajitas, or even over rice. Don’t forget your favorite toppings!
