chill time 30 minutes
Total Time 45 minutes
Servings: 4 servings

Ingredients

  • 2 large cucumbers cut into large chunks (peeled if necessary)
  • 1/2 red onion diced
  • 1 pint cherry tomatoes halved or quartered, if large
  • 1/4 cup flat leaf parsley minced
  • salt and black pepper to taste
For the dressing

Method

  1. Combine the vegetables: In a large mixing bowl, add the chopped cucumber, cherry tomatoes, diced red onion, and chopped parsley.
  2. Sprinkle salt and pepper over the veggies to bring out their natural flavor.
  3. Make the vinaigrette: In a small bowl or measuring cup, whisk together the olive oil, red wine vinegar, minced garlic, salt and pepper.
  4. Pour the vinaigrette over the vegetable mixture and stir gently to coat everything evenly.
  5. Squeeze fresh lemon juice over the top for a final burst of brightness.
  6. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld. Taste and adjust seasoning if needed.
