Hot Rueben Dip

Hot Reuben dip is a creamy, cheesy appetizer made with corned beef, Swiss cheese, sauerkraut, and Russian dressing. Baked until bubbly and served with rye bread, it tastes just like a classic Reuben sandwich in dip form.

Ingredients
  

  • 8 oz cream cheese softened
  • ¾ lb corned beef diced
  • ½ lb Swiss cheese diced or shredded
  • ½ cup Russian dressing or Thousand Island
  • 1 cup sauerkraut drained
  • Black pepper to taste
  • Cubed brown or rye bread for serving

Method
 

  1. Preheat oven to 350°F and grease a 9x9 baking dish.
  2. In a mixing bowl, beat the cream cheese until smooth and fluffy.
  3. Stir in corned beef, Swiss cheese, Russian dressing, and sauerkraut until combined.
  4. Spread mixture into the prepared baking dish.
  5. Crack fresh black pepper over the top.
  6. Bake 25–30 minutes, until hot and bubbly.
  7. Serve warm with brown or rye bread cubes for dipping.
