This easy baked Rueben dip is rich, cheesy, tangy, and absolutely perfect for scooping up with rye or brown bread cubes. (I used the Cheesecake Factory’s brown bread and I highly recommend!) Whether you’re hosting a party, celebrating St. Patrick’s Day, or just looking for a crowd-pleasing appetizer, this Reuben dip comes together quickly and disappears even faster.

The best part? You can make it in about 10 minutes of prep with simple ingredients like deli corned beef and cream cheese.

  • 9×9 Baking Dish (8×8 size works as well)
  • Cream cheese, softened
  • Corned beef, diced (deli corned beef works great or use leftover diced corned beef!)
  • Russian dressing (or substitute Thousand Island)
  • Sauerkraut, drained
  • Black pepper, to taste
  • Cubed brown bread or rye bread, for serving- I love the Cheesecake Factory Brown Bread! Walmart sells it.

How To Make Rueben Dip

1. Preheat the oven

Preheat your oven to 350°F and lightly grease a 9×9 baking dish.

2. Whip the cream cheese

In a mixing bowl, beat the softened cream cheese until smooth and fluffy.

3. Add the filling ingredients

Stir in the corned beef, Swiss cheese, Russian dressing, and sauerkraut until everything is well combined.

4. Assemble the dip

Spread the mixture evenly into the prepared baking dish. Add freshly cracked black pepper on top.

5. Bake

Bake for 25–30 minutes, until the cheese is melted and the dip is hot and bubbly.

6. Serve

Serve warm with cubed brown bread or rye bread for dipping.

Tips for the Best Reuben Dip

  • Drain the sauerkraut well-Too much liquid can make the dip watery. Press the sauerkraut lightly with paper towels if needed.
  • Use deli corned beef for convenience-It’s easy, affordable, and works perfectly in this recipe.
  • Shred your own Swiss cheese-Freshly shredded cheese melts smoother than pre-shredded.
  • Serve it hot-This dip is best when the cheese is melted and creamy right out of the oven.

  • Use leftover corned beef-This recipe is a fantastic way to use leftover corned beef from St. Patrick’s Day.
  • Add extra cheese-Mix in a little mozzarella or provolone for extra meltiness.
  • Make it in a slow cooker-Combine everything and cook on low for 2–3 hours, stirring occasionally.

How to Store Leftovers

FAQ’s

Can I make Reuben dip ahead of time?

Yes! Assemble the dip up to 24 hours in advance, cover, and refrigerate. Bake when ready to serve.

Can I substitute Thousand Island dressing?

Absolutely. Thousand Island dressing is very similar and works perfectly in this recipe.

Do I need to cook the corned beef first?

No. If you’re using deli corned beef, it’s already cooked and ready to mix into the dip.

Can I freeze Reuben dip?

Because of the cream cheese and sauerkraut, freezing isn’t recommended. The texture can change after thawing.

What bread is best for serving?

Rye bread or dark brown bread is the most traditional and pairs perfectly with the flavors of the dip.
