Lemonade Puppy Chow (Lemon Muddy Buddies)

This easy Lemonade Puppy Chow is a sweet and tangy no-bake snack made with Chex cereal, white chocolate, fresh lemon juice, and powdered sugar. Perfect for summer parties, holidays, and gifting!

Ingredients
  

  • 9 cups Rice Chex cereal try blueberry Chex for lemon blueberry flavor
  • 10 ounces white almond bark white chocolate melts, or 1½ cups white chocolate chips (see note)
  • ¼ cup salted butter
  • 4 teaspoons lemon zest about 2 lemons
  • ¼ cup fresh lemon juice about 2 lemons
  • 2 cups powdered sugar

Method
 

  1. Place the Chex cereal in a large mixing bowl and set aside.
  2. In a microwave-safe bowl, combine the white chocolate, butter, lemon zest, and lemon juice.
  3. Microwave for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring after each, until the mixture is smooth and fully melted.
  4. Pour the warm lemon mixture over the cereal and gently fold until every piece is evenly coated.
  5. Add the powdered sugar and gently toss until the cereal is completely coated. A large zip-top bag also works well for this step.
  6. Spread the puppy chow onto parchment paper or a parchment-lined baking sheet in an even layer.
  7. Let cool completely for at least 1 hour before storing in an airtight container. Letting it cool completely prevents the snack mix from getting soggy or stale prematurely.
  8. Serve immediately or store in an airtight container for later snacking.

Notes

  • Fresh lemon juice and zest give the best flavor.
  • Be sure the puppy chow is completely cool before storing. Sealing it while still warm traps moisture, causing it to lose its crunchy texture.
  • Store in an airtight container for up to one week or freeze for up to two months.
  • If using white chocolate chips add 1 teaspoon of coconut oil to the chips before microwaving. White chocolate hips can be finicky and seize easily, the coconut oil ensure it will be smooth and pourable.
