Ingredients
Pretzel Crust:
- 3 cups pretzels
- 1/2 cup unsalted, melted butter 1 stick
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
Cream Cheese Layer:
- 8 oz cream cheese softened
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 8 oz Cool Whip or whipped topping
Jell-O Layers:
- 1 3 oz box blue raspberry Jell-O
- 1 3 oz box strawberry Jell-O
- 1 cup sliced strawberries optional
- 1/2 cup fresh blueberries optional
- 2 cups boiling water 1 cup for each flavor
- 2 cups cold water 1 cup for each flavor
Method
- Preheat oven to 350°F. Crush the pretzels in a Ziploc bag using a meat mallet or rolling pin. Leave the pretzels on the chunkier side for crunch. In a medium bowl, mix crushed pretzels, melted butter, and sugar. Press firmly into the bottom of a greased 9x9 pan. Bake for 8–10 minutes. Let cool completely.
- Prepare the Cream Cheese Layer: In a mixing bowl, beat softened cream cheese with both sugars and vanilla extract until smooth. Fold in Cool Whip until fluffy. Spread evenly over the cooled crust using an offset spatula, making sure to seal the edges (this helps prevent the Jell-O from seeping into the crust). Chill for at least 30 minutes.
- Make the Blue Jell-O Layer: Dissolve blue raspberry Jell-O in 1 cup boiling water. Stir in 1 cup cold water. Let cool slightly, then carefully pour over the cream cheese layer. Place blueberries (if using) evenly into the blue Jell-O. Chill until fully set—about 3 hours.
- Make the Red Jell-O Layer: Repeat the same process with the strawberry Jell-O. Once the blue layer is set, place the sliced strawberries on top. Gently pour the red Jell-O on top and refrigerate again until completely firm—at least 4 more hours or overnight.
- Slice into 9 squares and serve chilled. Garnish with a dollop of whipped cream or a few extra berries for an extra festive touch.

Tips for Success:
- Let the blue Jell-O fully set before adding the red. It should be firm to the touch so the red doesn’t seep in and mix colors.
- Cool the red Jell-O to room temperature before pouring it on top. Hot liquid will melt the blue layer.
- Pour gently, over the back of a spoon or down the side of the dish to avoid disturbing the layer beneath.
- Seal the Cream Cheese Layer – Spread the filling all the way to the edge to keep the Jell-O from leaking into the crust.
- Use Fresh Fruit – Fresh berries give the best texture and flavor, but you can use frozen (just thaw and drain them first). The fruit can be left out, if you prefer.
- Chill Time Matters – Don’t rush the chilling between layers or the colors might blend.
- Decorate the Top – Add whipped cream, festive sprinkles, or even a mini American flag pick for extra flair!
- Make ahead: You can make this dessert up to a day in advance. Keep it tightly covered in the fridge until serving. Leftovers will keep for 2–3 days, though the crust may soften over time.
