Peach Salsa

If you love fresh peaches and you love salsa, you'll love this sweet and spicy peach salsa. A little sweet, a little heat, it's the perfect combination! Enjoy with tortilla chips, on tacos, or on top of grilled chicken, tofu, or fish.

Ingredients
  

  • 2 large, or 3 small peaches skinned and diced
  • 1 mango skinned and diced
  • 1 cup tomatoes diced
  • 1 jalapeño seeds removed, diced
  • 1/2 red onion diced
  • 1/4 cup cilantro chopped
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

  1. Peel and dice the peaches and mango. Dice the tomatoes, jalapeño (removing the seeds for less heat), and red onion. Chop the cilantro finely.
  2. Mix everything together: In a large bowl, combine the diced peaches, mango, tomatoes, jalapeño, red onion, and chopped cilantro.
  3. Pour in the lime juice, then sprinkle in the salt and pepper. Stir gently to combine all the ingredients evenly.
  4. Let it chill: Cover and refrigerate the salsa for at least 15 minutes to let the flavors meld.
  5. Before serving, give the salsa a taste and adjust salt, pepper, or lime juice if needed.
  6. Serve chilled with tortilla chips, on tacos, over grilled chicken or fish, or as a fresh topping for salads and grain bowls.
