Sheet Pan Ranch Chicken with Green Beans and Potatoes

This easy Sheet Pan Ranch Chicken dinner is a weeknight lifesaver! Juicy chicken, tender baby potatoes, and crisp-tender green beans are tossed in flavorful ranch seasoning and roasted together on one pan.

Ingredients
  

  • 4 chicken breasts cut into cubes
  • 1 pound baby yellow potatoes cleaned (if they are large cut the potatoes in half or quarters)
  • 1 pound green beans rinsed and trimmed
  • 3 tablespoons olive oil
  • 1 ounce packet dry ranch seasoning mix
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp parsley flakes
  • 1/2 cup cheddar cheese shredded (optional)

Method
 

  1. Preheat oven to 375°F.
  2. In a small bowl mix together the ranch seasoning, black pepper, paprika and parsley. To a large bowl add the potatoes, 1 tablespoon of olive oil and a 1/3 of the mixed seasoning.
  3. Toss to coat and pour the potatoes on a large sheet pan.
  4. Next, to the same bowl add the green beans, 1 tablespoon of olive oil and a 1/3 of the mixed seasonings. Toss to coat and pour the green beans on the sheet pan next to the potatoes.
  5. Then, to the same bowl add the chicken, the remaining 1 tablespoon of olive oil and rest of the seasonings. Mix well and add the chicken on the sheet pan. ( you can split this up between 2 or 3 smaller sheet pans)
  6. Bake for 25-30 minutes until the chicken is cooked but still juicy and the potatoes are fork tender.
  7. Optional step: make smashed cheesy potatoes. Using the bottom of a glass or small bowl. Smash the potatoes. Sprinkle over the shredded cheese and pop back into the oven for 5 minutes to melt the cheese.
  8. Add preferred toppings to the cheesy potatoes like sour cream, green onions and chopped bacon.
