Main Ingredients
- Sheet pan – I use a 15×21 size
- Chicken breasts – skinless and boneless (you can substitute chicken thighs—just reduce cook time)
- Baby yellow potatoes – cut evenly so they cook at the same rate
- Green beans – broccoli works great as a substitute
Seasoning & Oil
- Olive oil – helps everything roast and keeps the seasoning from drying out
- Dry ranch seasoning mix
- Black pepper
- Paprika
- Dried parsley
Optional
- Shredded cheddar cheese – sprinkle over the potatoes for extra flavor
How to Make Sheet Pan Ranch Chicken
Preheat oven to 375°F.
In a small bowl mix together the ranch seasoning, black pepper, paprika and parsley. To a large bowl add the potatoes, 1 tablespoon of olive oil and a 1/3 of the mixed seasoning.
Toss to coat and pour the potatoes on a large sheet pan.

Next, to the same bowl add the green beans, 1 tablespoon of olive oil and a 1/3 of the mixed seasonings. Toss to coat and pour the green beans on the sheet pan next to the potatoes.

Then, to the same bowl add the chicken, the remaining 1 tablespoon of olive oil and rest of the seasonings. Mix well and add the chicken on the sheet pan. ( you can split this up between 2 or 3 smaller sheet pans)

Bake for 25-30 minutes until the chicken is cooked but still juicy and the potatoes are fork tender.

Optional step: make smashed cheesy potatoes.

Using the bottom of a glass or small bowl. Smash the potatoes. Sprinkle over the shredded cheese and pop back into the oven for 5 minutes to melt the cheese.

Add preferred toppings to the cheesy potatoes like sour cream, green onions and chopped bacon.
