Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a large mixing bowl, combine the stuffing, turkey, gravy, eggs, and Parmesan. Stir until everything is well mixed. If the mixture feels too dry, add a splash (about ¼ cup) of broth. If it feels too wet, sprinkle in a few breadcrumbs. You’ll know it’s just right when it holds together easily when pressed into a ball.
Scoop the mixture into golf ball-sized portions and roll into balls. Arrange them on your prepared baking sheet and lightly spray with oil or nonstick spray.
Bake for 20–25 minutes, flipping halfway through, until golden brown and crisp on the edges.
While the stuffing balls bake, add the cranberry sauce and orange juice to a small saucepan over medium heat. Whisk until smooth, then bring to a gentle simmer. Let it simmer for a few minutes until slightly thickened. Remove from heat and cool before serving.
