I have to admit, corn casserole never graced my Thanksgiving table growing up, but it was a staple for my husband. He absolutely LOVES corn casserole and we have to make it every year- even if he’s the only one who eats it. (He doesn’t mind having the whole pan to himself 😉)
This casserole is so simple to put together but is incredibly flavorful! The bacon and onion gives it a smoky flavor while the corn lends to it’s sweetness. It’s easy enough for a weeknight dinner but special enough to serve at the holidays alongside turkey, ham, or roast beef.
The best part? It’s made with pantry staples and comes together in just a few minutes before baking, or it can be prepped the day before. That means less fuss and more flavor on your table.

How To Make It
Step 1: Cook the Bacon
Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels, chop, and set aside.

Step 2: Cook the Onion
Using the bacon drippings, sauté the diced onion until softened (about 4–5 minutes). Sprinkle in 1 tablespoon of flour and whisk until combined. Season lightly with salt and pepper. Set aside.

Step 3: Make the Custard Base
In a large mixing bowl, whisk together the milk and remaining flour until smooth. Add the eggs and whisk again until fully combined.
Step 4: Mix It All Together
Stir in the sugar, melted butter, both cans of corn, the cooked onions, chopped bacon, paprika, and additional salt and pepper to taste.

Step 5: Bake
Pour the mixture into a greased 8×8 baking dish. Bake uncovered at 350°F for 50–60 minutes, until the center is set and the top is golden brown.

Step 6: Rest and Serve
Let the casserole rest for 15 minutes before slicing—it helps the pieces hold together beautifully.
