Crock Pot Dr Pepper London Broil
This Crock Pot Dr Pepper London Broil is an easy, flavorful way to turn an affordable cut of beef into a tender family dinner. London broil is slow cooked with beef broth, BBQ sauce, Worcestershire sauce, Dijon mustard, garlic, seasonings and my secret ingredient- Dr. Pepper, for a delicious sweet and savory flavor.

And the best part? The flavorful cooking liquid can be turned into a rich beef gravy to spoon over the sliced London broil and mashed potatoes!
It’s no secret that groceries are getting more expensive every day. My beloved chuck roast is becoming a once and a while treat rather than a Sunday staple due to the rising costs. The last time I looked chuck roast was more than $12 a pound! And with feeding a family of 5 that adds up quick.
Which is why I love a London Broil. It is a leaner cut of beef, so you need to watch it and cook it less than a roast. But it’s also more economical. This was half the price of chuck roast. So if you want a hearty, beefy dinner at a lower cost, try a London broil.

Why You’ll Love This Crock Pot London Broil
- Easy to make: The slow cooker does most of the work.
- Sweet and savory: Dr Pepper adds a subtle sweetness that pairs surprisingly well with beef.
- Tender beef: Cooking the London broil low and slow helps keep it tender without overcooking it.
- Homemade gravy: Don’t throw away that delicious cooking liquid! It makes an incredible gravy.
- Family friendly: Serve it with mashed potatoes and a vegetable for an easy Sunday dinner.
What Is London Broil?
Despite its name, London broil isn’t actually a specific cut of beef. The term is commonly used for lean cuts such as top round steak or roast.
Because London broil is relatively lean, it doesn’t need the same extremely long cooking time as a fatty chuck roast. For this recipe, I recommend cooking it on LOW for about 5 hours, then checking it for tenderness.
The exact cooking time can vary depending on the thickness of your beef and your slow cooker, so use tenderness as your guide.

How to Make Crock Pot Dr Pepper London Broil
1. Add the onions
Place the sliced onion in the bottom of the crock pot.
The onions will cook down in the flavorful sauce and become incredibly tender.
2. Season the beef
Pat the London broil dry with paper towels.
Season both sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.
Place the seasoned beef on top of the onions.

3. Make the Dr Pepper sauce
In a bowl, whisk together the Dr Pepper, beef broth, BBQ sauce, Worcestershire sauce, brown sugar, Dijon mustard, and minced garlic.
Pour the mixture over the London broil.

4. Slow cook
Cover and cook on LOW for about 5 hours, or until the beef is tender.
Because London broil is a lean cut, I recommend checking it around the 4½-hour mark. You want it tender enough to slice easily without cooking it for so long that it becomes dry.
5. Rest and slice
Carefully remove the London broil from the crock pot and place it on a cutting board.
Let it rest for about 10 minutes before slicing.
Slice the beef against the grain into thin slices. This is especially important with a lean cut like London broil because it makes the meat much easier to chew.

How to Make Gravy From the Crock Pot Juices
Don’t throw away that cooking liquid! It’s packed with flavor from the beef, Dr Pepper, BBQ sauce, Worcestershire sauce, and onions.
- Carefully strain about 2 cups of the cooking liquid from the crock pot into a saucepan.
- Heat the liquid over medium heat until it begins to simmer.
- In a small bowl, whisk together 2 tablespoons cornstarch and 3 tablespoons cold water to make a slurry.
- Slowly whisk the cornstarch mixture into the simmering cooking liquid.
- Continue cooking for 2–4 minutes, stirring frequently, until the gravy thickens.
- Taste and add additional salt and pepper if needed.
Spoon the warm gravy over the sliced London broil and mashed potatoes.

To reheat the beef, place the leftover London broil and some of the gravy in a pot over low heat. Once the beef is heated through, shred it into bite-sized pieces.
Toast your favorite hoagie rolls, then add a slice or two of provolone cheese. Pile the hot shredded beef on top and let the heat from the beef melt the cheese into all those delicious, savory juices.
Serve the sandwiches with a small cup of the warm gravy on the side for dipping. It’s basically a homemade French dip with a Dr Pepper London broil twist—and honestly, the leftovers might be even better than the first-day dinner!

Tips for the Best Crock Pot London Broil
Don’t overcook the beef
London broil is much leaner than a chuck roast, so I don’t recommend cooking it for 8–10 hours. Start checking it around 4½–5 hours.
Slice against the grain
This makes a huge difference in the tenderness of the finished beef. Look for the direction the muscle fibers are running and cut across them rather than with them.
Let the beef rest
Allowing the meat to rest for about 10 minutes before slicing gives the juices time to redistribute.
Don’t skip the gravy
The cooking liquid is one of the best parts of this recipe! Turning it into gravy gives you a delicious sauce for both the beef and mashed potatoes.
Can I use Diet Dr Pepper?
Yes. You can substitute Diet Dr Pepper if that’s what you have on hand. The flavor will be slightly different, but it will still work in the recipe.
Frequently Asked Questions
Can I cook London broil in the crock pot?
Yes! Slow cooking London broil is an easy way to prepare this lean cut of beef. Because it is leaner than chuck roast, it’s important not to automatically cook it for extremely long periods of time. For this recipe, start checking it around 5 hours on LOW.
Why is my London broil tough?
If your London broil is tough, it may need a little more cooking time, but overcooking can also make a lean cut dry. The thickness of the meat and your particular slow cooker can affect the cooking time. Slicing the finished beef thinly against the grain will also help.
Can I make this without the gravy?
Absolutely. The beef is delicious served with the onions and cooking juices, but I highly recommend making the gravy. It only takes a few extra minutes and turns the cooking liquid into a rich sauce.
Can I use another soda instead of Dr Pepper?
Dr Pepper gives this recipe its signature flavor. Its sweetness and caramel-like flavor work especially well with the BBQ sauce and Worcestershire sauce. Root beer, Coca Cola, Pepsi or any other dark soda will also work.
Can I make this recipe ahead of time?
Yes. You can cook the beef, slice it, and store it in the refrigerator for up to 3–4 days. Store the gravy separately and gently reheat both on the stovetop before serving.
What Makes This Recipe So Good?
The combination of Dr Pepper, BBQ sauce, Worcestershire sauce, and Dijon mustard gives this London broil a delicious balance of sweet, smoky, tangy, and savory flavors.
The Dr Pepper might sound like an unusual ingredient for beef, but it works beautifully here. It adds sweetness to the cooking liquid while the Worcestershire sauce and BBQ sauce bring plenty of savory flavor.
And once that cooking liquid is thickened into gravy? That’s when this easy crock pot dinner really comes together.
Serve the sliced beef over creamy mashed potatoes, pour the Dr Pepper beef gravy over the top, and you’ve got a cozy dinner the whole family will love.
