  • Crock Pot– 6 quart or larger size is perfect
  • 1–1½ lb boneless ham (ham steak or small ham portion)
  • 3–4 baby Yukon gold, red potatoes, or 2 peeled russet potatoes, cut into cubes
  • 2 cups baby carrots
  • ¼ cup chicken broth or water
  • 1 tbsp butter, cut into small pieces
  • Seasonings- salt, pepper, sage, rosemary

For the Glaze

  • 2 tbsp brown sugar
  • 1 tbsp honey or maple syrup
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ¼ tsp black pepper

How to Make a Crock Pot Easter Ham Dinner

Step 1: Layer the Potatoes

Spray your crock pot with nonstick cooking spray. Pour the chicken broth or water into the basin. Place the potatoes in the bottom of your crock pot. Season with salt and pepper to taste.

Step 2: Add the Ham

Place the ham directly on top of the potatoes.

Step 3: Add the Carrots

Arrange the baby carrots around the ham. Season the carrots with salt, pepper, rosemary and sage.

Step 4: Make the Glaze

In a small bowl, mix together the brown sugar, honey, Dijon mustard, garlic powder, and black pepper.

Step 5: Glaze & Butter

Spread the glaze evenly over the ham and in between slices. Optional- save some glaze to brush on after it’s cooked. Scatter the butter pieces over the potatoes and carrots.

Step 6: Cook

  • LOW: 4–5 hours
  • HIGH: 2½–3 hours

The potatoes should be fork-tender and the ham heated through.

Step 8: Serve

Spoon some of the cooking juices over the ham and vegetables and serve warm. You can serve the potatoes straight from the crock pot or make them into mashed potatoes.

Tips For Best Results

  • Use baby carrots for the best texture—they soften perfectly without getting mushy. If using full size carrots be sure to cut them into large chunks.

How To Make Mashed Potatoes

You’ll Need

  • Cooked potatoes from your crock pot ham dinner
  • 2–4 tbsp butter, softened
  • 2–4 tbsp warm milk or cream (or use ham juices if you want extra flavor!)
  • Salt, to taste
  • Black pepper, to taste

How to Make Them

  1. Remove the potatoes
    Remove the ham and carrots to a serving platter. Scoop the cooked potatoes out of the crock pot and place them in a bowl.
  2. Mash
    Use a potato masher or fork to mash until mostly smooth. They’ll mash easily since they’re already tender. If they seem a little chunky, switch to a hand mixer for 10–15 seconds
  3. Add butter & liquid
    Stir in butter while the potatoes are still hot so it melts right in. Slowly stir in warmed milk, cream, or a splash of the cooking juices until you reach your desired consistency.
  4. Season
    Add salt and pepper to taste. Adjust as needed. Remember These potatoes already have flavor from cooking with the ham, so start light on salt.

Can I use a different type of potato?

Yes! Yukon golds and red potatoes work best, but baby potatoes or even chopped russet potatoes will work—just keep the pieces similar in size.

Is the ham already cooked?

Notes

This recipe makes 2-3 servings. Add more ham slices, carrots and potatoes for more servings or use less for 1-2 servings. The cook time will remain the same. 
Cut the potatoes into the same size so they cook uniformly. If using russet potatoes, cut into a small dice to ensure they cook through in the allotted time.
