Chicken

  • 4 boneless, skinless chicken breasts
  • 8 slices thin-cut bacon
  • Salt + pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Filling

  • 4 oz cream cheese, softened
  • 1/3 cup jarred roasted red peppers, diced
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 cup chopped spinach
  • 1 tbsp fresh chopped parsley or 1 tsp dried
  • Salt + pepper, to taste

How To Make It

1. Prep the Oven and Stuffing

Preheat your oven to 375°F.

In a large bowl, mix together all the stuffing ingredients: cream cheese, roasted red peppers, mozzarella, Parmesan, spinach, parsley, and a pinch of salt and pepper. Stir until well combined.

2. Cut and Stuff the Chicken

Cut a deep pocket in each chicken breast, slicing about 3/4 of the way through without cutting all the way open.

Stuff each chicken breast evenly with the cream cheese mixture. If you’d like, use toothpicks to help keep the filling tucked inside while cooking. Be sure not to overfill so the stuffing doesn’t seep out while baking.

Sprinkle the chicken with salt, pepper, garlic powder, and smoked paprika.

3. Wrap in Bacon

Wrap each chicken breast with two slices of bacon, making sure the ends overlap at the bottom to stay secure.

4. Bake

Place the stuffed chicken in a baking dish. Cover and bake for 20 minutes.

Uncover, flip each chicken breast, and continue baking for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F.

5. Crisp the Bacon

If you prefer crispier bacon, switch the oven to broil and broil the chicken for 2–3 minutes, watching closely so it doesn’t burn.

Let the chicken rest for 5 minutes, then slice and enjoy!
