If you love an Aperol spritz, you’re going to obsess over these Aperol Spritz Jell-O shots. They’re bright, bubbly, lightly bitter, and citrusy—basically the classic cocktail in cute, party-friendly form.

These are perfect for a New Year’s Eve party, Mother’s Day brunches, bridal showers, girls’ nights, summer parties, or anytime you want something fun that feels a little fancy but is secretly super easy. The orange juice adds just enough sweetness to balance the Aperol and makes them extra refreshing.

And yes… they’re as pretty as they are delicious 🍊✨Bonus: you can make them ahead, which is always a win on a busy party night.

How To Make It

Bloom the gelatin
Pour the orange juice into a medium bowl. Sprinkle the gelatin evenly over the top, stir, and let it sit for about 5 minutes until fully bloomed.

Warm the Aperol
Add the Aperol (and sugar, if using) to a small saucepan. Heat gently over low heat until warm—do not boil.

Dissolve the gelatin
Whisk the bloomed gelatin into the warm Aperol mixture until completely dissolved and smooth.

Add the prosecco
Remove from heat and let cool for 5 minutes. Gently stir in the prosecco, being careful not to lose too much fizz. If you’re using edible glitter, stir it in at this time.

Pour and chill
Pour the mixture into plastic shot cups or silicone molds. If using small molds, I find using a turkey baster to pour the liquid makes the process a breeze! Refrigerate for 4 hours, or until fully set.

Garnish and serve
Top with gold flakes, candied orange peels, or orange zest right before serving.

  • Less bitter: Add an extra tablespoon or two of orange juice or sugar
  • Even lighter: Use 2 cups prosecco and keep Aperol at ½ cup
  • Stronger: Replace 1/4 of the prosecco with vodka (orange flavored vodka would be great!)
  • Cute serving idea: Pour into hollowed-out orange halves for a fun presentation

Aperol Spritz Jello Shots

These Aperol Spritz Jell-O shots are bright, bubbly, and citrusy! Made with Aperol, prosecco, and orange juice, they’re perfect for brunch, showers, and parties.

Equipment

  • Silicon Mold, shot cups, or a 9×9 baking dish

Ingredients
  

  • 1/2 cup Aperol
  • 1 cup prosecco or dry sparkling wine
  • ½ cup orange juice fresh-squeezed or pulp-free
  • 2 packets unflavored gelatin
  • 1-2 tbsp sugar optional
  • Candies orange peels gold flakes, or orange zest, for garnish

Method
 

  1. Pour the orange juice into a bowl. Sprinkle gelatin evenly over the top, stir, and let bloom for 5 minutes.
  2. Warm the Aperol (and sugar, if using- I used 2 tablespoons sugar to make it sweeter) in a small saucepan over low heat until warm—do not boil.
  3. Whisk the bloomed gelatin into the warm Aperol until completely dissolved.
  4. Remove from heat and let cool for 5 minutes. Gently stir in the prosecco.
  5. Pour into shot cups or molds and refrigerate 4 hours, until set. If you are using a mold, use a turkey baster or measuring cup with a pour spout to distribute the liquid easily. You can also pour into a 9×9 baking dish and cut into squares after set.
  6. Garnish with edible gold flakes, candies orange peel, or zest before serving. Refrigerate leftovers.
