This recipe is perfect for game day Sunday! Tangy, juicy chuck roast is slow cooked until it’s fall apart, melt in your mouth, tender. You could stop there, add a side of creamy mashed potatoes, your favorite vegetable and have the most delicious dinner.
OR- you can pile the beef high on slider buns, add a bunch of cheddar cheese, crisp pickles and crunchy fried onions and serve crave-worthy BBQ Beef Sliders.
Either way is a win!

Equipment
- Crock Pot– 6 quart or larger
- Sheet Pan
- Parchment Paper
- Heavy Skillet– for searing
Ingredients
- 2 lb beef chuck roast– if you’d like to double this recipe, use a 3-5 pound chuck roast
- 1 tablespoon olive oil– to sear the beef
- 1 large red onion, thinly sliced
- 1 ½ cups BBQ sauce, plus more for serving (use your favorite)
- ½ cup beef broth
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar (optional, for added sweetness)
- Seasonings– garlic powder, smoked paprika, salt and pepper
- Slider buns (Hawaiian rolls or brioche buns work great)
- Shredded cheddar cheese– provolone, mozzarella, pepper jack all work great
- Toppings (optional): Coleslaw, pickles, fried onions
- 3 tablespoons butter + garlic salt (optional): to brush over the slider buns before baking

How To Make It
Season and sear the beef:
Pat the chuck roast dry and season both sides with salt, pepper, garlic powder, and smoked paprika.

Add the olive oil to a pan and turn the heat to medium high. Sear each side for 2 minutes.

Layer the crock pot:
Add sliced onions to the bottom of the crock pot. Place the seared chuck roast on top.

Mix and pour the sauce:
In a bowl, combine BBQ sauce, beef broth, apple cider vinegar, and brown sugar. Pour over the roast.

Cook low and slow:
Cover and cook on LOW for 8 hours or HIGH for 4-5 hours, until the meat is fork-tender and easy to shred.

Shred the beef:
Remove the roast and shred it with two forks, discarding any fat. Skim excess fat from the juices, then return the meat to the sauce in the slow cooker to stay warm.

Build the sliders
Preheat the oven to 350 degrees F. Place the buns on a sheet pan lined with parchment paper.
Split the slider buns. Add pickles,

followed by the shredded beef,

cheddar cheese

and fried onions (if using).

Add the top buns back on. Mix the melted butter and garlic salt together and brush over the tops of the slider buns.

Pop into the oven for 10 minutes until the buns are golden brown and the cheese is melted.

Enjoy!
Cut the sliders and serve with a side of oven fries or potato chips and dig in!
