  • A crock pot– 6 to 8 quart size
  • Chuck Roast or Pre-Packaged Stew meat, cut into 2 inch pieces. I’ve made this with a chuck roast that I’ve cut into chunks and with pre-cut stew meat and both are great! The beef is fall apart tender at the end.
  • Onion soup mix packet– the dry mix, such as Lipton Onion Soup Mix
  • Butter– for richness! This helps to make the sauce. Use salted or unsalted, it’s your call.
  • Seasonings– grated garlic and pepper. I don’t use additional salt in this because the onion soup mix contains sodium already. Feel free to add any other seasonings you like.
  • Potatoes– cut into chunks. Any potato works! Skin on or off, totally up to you. I prefer baby red potatoes.
  • Onion– sliced, for extra flavor.
  • Baby Carrots– or peeled carrots cut into chunks. This makes it a full meal in one pot!
  • Optional: add mushrooms if you’d like!

How to make it

Just dump everything in and go!

First, spray your slow cooker with nonstick spray or use a crock pot liner. Add in the beef, potatoes, carrots, onion, garlic, pepper, and onion soup mix. Give it a good stir.

Place the sliced butter on top. Cover and Cook low and slow- about 6 hours is perfect. This can be cooked on high for 3-4 hours, but I have found the beef is more tender if you can cook it on low.

Serve up your oniony beef, carrots and potatoes with that buttery sauce spooned over top and get ready to feast!

Serve sliced bread and a big salad on the side, if you’d like.

  1. For extra flavor, add an extra onion for a bolder onion taste or toss in fresh mushrooms for a savory depth.
  2. Want to include different vegetables? Add frozen or fresh broccoli, green beans, or asparagus during the last 30 minutes of cook time to keep them from getting too soft.
  3. This recipe works with chuck roast cut into pieces, steak tips, pre-cut stew meat, round steak or even venison!

DIY Onion Soup Mix

How to make your own onion soup packet. Mix together:

  • 2 tablespoons-1/4 cup dried minced onions
  • 2 teaspoons low sodium beef bullion powder or granules
  • 1 1/2 teaspoons onion powder
  • 1/4 teaspoon celery seeds
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika

Feel free to adjust this based on your taste and preferences.

No need to sear the meat! Cooking the beef low and slow makes it fall apart tender and juicy.

No need to add any liquid! The butter along with the cooking juices is enough.

More FAQ’s

  • No additional liquid is needed—the butter provides enough moisture for cooking.
  • For added veggies, try asparagus, broccoli, or green beans (fresh or frozen). Simply toss them in during the last 30 minutes of cooking to keep them from becoming too soft.
  • If your beef is cut into smaller pieces, reduce the cooking time to about 5 hours to prevent overcooking or burning. I like 1 1/2″ to 2″ chunks of beef.

Ingredients

  • 2 pounds chuck roast cut into 2 inch pieces, or pre-cut stew meat
  • 1-2 pounds baby red potatoes cut into quarters
  • 4 tbsp butter cut into slices (salted or unsalted both work)
  • 1 pound baby carrots
  • 1 onion sliced
  • 1 packet onion soup mix
  • 4 garlic cloves minced
  • 1 tsp black pepper

Instructions

  • Spray or line your 6-8 quart size slow cooker.
  • Add in the potatoes, beef, carrots, onions and seasonings and mix together. Place the butter slices on top.
  • Cover and cook on low 6 hours or high 3-4 hours.

Make your own Onion Soup Mix:
whisk together:

  1. I’m cooking this recipe now. I doubled the recipe and there’s no moisture in the crock. Idk what to do except put water or beef broth into it, now. It’s not through cooking either. The potatoes are still firm.

    1. Hi Wendy, this recipe doesn’t require any liquid. There’s a lot of factors that would lead to the potatoes not being cooked through though, happy to help you troubleshoot! The potatoes should be diced to bite size to ensure they cook through. The total cook time is 7 hours on low, which should be plenty of time to cook potatoes. Make sure you don’t lift the lid during cooking, every time you lift the crock pot lid you lose cooking time. Hope that helps!

  2. On your IG video you mentioned the onion soup mix having salt in it and not wanting the dish to be too salty. Do you use salted or unsalted butter? Thanks!

    1. Yes, but I’ve never tested it. You’d probably want to add 2-4 cups of beef broth and simmer on the stove for 2 hours or so until the meat is tender and cooked through. Let me know if you try and how it turns out!

  3. I made this last night, per your suggestions I added both an onion and baby carrots. I did increase the butter by 3 tablespoons to account for the additional veggies and it was out of this world. My husband and son loved it. There are just enough leftovers for another meal which is perfect since my husband is recovering from surgery and I don’t have a lot of time to be in the kitchen. Thank you so much for the recipe!

    The first time I made this the meat was falling apart and delicious. But the next time the meat was tough. Did I not cook it long enough?? Any suggestions would be appreciated!!

    1. I’m sorry to hear that! I could be a number of factors. How long did you cook it the first time versus the second time? Did you use the same cut of meat and the same amount of meat and butter?

      1. Stephanie, I used the same cut of beef from the same grocery. I thought I cooked the same 5-6 hours, checking after 5. I did use the same amounts as in the recipe. I am going to try it again, anything I should try changing? Or something I should consider? Thanks so much, I’ve enjoyed your videos and he new recipes!

    This is the second time I’ve made this recipe. If memory serves me correctly, the first time was a bit better, the meat totally fell apart. Today I used “beef round round cubes boneless.” I forget what I used the last time and today I added carrots and fresh garlic. The potatoes and carrots were tender and full of flavor, but the beef was not fall apart. Any ideas for the next time?

  7. I made this last night for dinner. Overall the taste was amazing. My crackpot runs hot so I only cooked for 3 1/2 hrs on High. I should have started potatoes first for an hr & then added meat. Meat was too well done for my liking. I had quite a bit of liquid & was happy about that. The taste was delicious & I also added can of green beans in the last hour.

    This is the best recipe of yours that we’ve tried (so far). I’ll definitely make it again soon.
    I had 2.67 lbs of stew beef to work with (plus 2 lbs of Yukon gold potatoes and a pound of baby carrots) so I added 1.5 packets of onion soup mix. I also added about 8 Tbsp of butter (4 Tbsp each unsalted & salted) to account for the extra stew beef. I’ll likely just have salted butter on hand next time I make this dish, and think it will be fine.
    I cut the baby carrots in thirds and some of the thicker baby carrot pieces were a bit undercooked (to my liking). I knew better but was rushing to get the crockpot going before I had to jump onto a call. I cut the potatoes into about 3/4″ pieces, and they were perfect. The beef fell apart while stirring and dishing up dinner.
    I always start this crockpot on high for an hour before dropping it to low (Hamilton Beach programmable slow cooker, 6 quart). I don’t typically have this problem with other slow cookers but this unit can’t bring the temperature up enough to equal a “normal” low temperature directly from the low heat setting. I cooked this dish for 1 hour on high, almost 5 hours on low.
