What is Hasselback Style?

Hasselback style is a cutting technique where food is sliced into thin, even cuts almost all the way through, but not completely. The bottom stays intact, so the food fans out slightly as it cooks. The cuts create extra surface area, allowing sauces, seasonings, or butter to seep into every slice. The outside gets crispy or caramelized while the inside stays tender and juicy.

The name comes from the Hasselbacken restaurant in Sweden, where the technique was first popularized with Hasselback potatoes.

  • Slow Cooker– 5 quart size or larger
  • 2–3 ropes smoked kielbasa
  • 21 oz canned pineapple chunks in juice
  • 18 oz your favorite BBQ sauce
  • ½ cup packed light brown sugar
  • 1 large yellow onion, diced (Vidalia or red onions are perfect as well)
  • 2 tbsp apple cider vinegar– balances the sweetness and adds a bit of brightness
  • 2 tbsp stone ground mustard-smoked sausage and mustard are a perfect match!
  • 1 tsp garlic powder

How To Make It

Prep the Kielbasa
Cut the kielbasa into 1–2 inch chunks.

Hasselback the Kielbasa

  • Lay a kielbasa chunk flat on a cutting board.
  • Place two chopsticks, wooden skewers, or butter knives on either side of the sausage. This prevents cutting all the way through.
  • Using a sharp knife, make thin slices across the top of the kielbasa, spacing them about ⅛–¼ inch apart. Slice down until your knife hits the chopsticks, keeping the bottom intact.
  • Repeat with all kielbasa pieces and place them into the crock pot.

Make the Sauce
In a medium bowl, mix together the pineapple (with juice), BBQ sauce, brown sugar, diced onion, apple cider vinegar, stone ground mustard, and garlic powder.

Cook
Pour the sauce mixture over the kielbasa.

  • Cook on LOW for 6 hours or HIGH for 3 hours, stirring halfway through.

Serve
Switch the slow cooker to WARM and serve directly from the crock pot with toothpicks as an appetizer or over rice for a delicious dinner.
