Crock Pot Pumpkin Crab Bisque
If you love a creamy, flavorful soup with a little Caribbean flair, this Crock Pot Pumpkin Crab Bisque is a must-try! Inspired by the famous Caribbean Pumpkin Crab Bisque at Grillsmith Restaurants, this homemade version combines pumpkin, sweet coconut cream, tomatoes, warm curry spices, fresh ginger, and tender crab meat for a rich and flavorful soup that’s a little sweet, a little spicy, and completely delicious.

I asked my followers on social media for requests for my Crocktober series and I had a couple requests for the famous Grillsmith Caribbean Pumpkin Crab Bisque. I was intrigued! So I started researching this soup and let me tell you, it must be incredible because it gets rave reviews!
However, Grillsmith uses blue crab, which is expensive. They also use ingredients that a typical home cook, like me, would have a hard time finding. So I wanted to make a home cook friendly version. While this is not an exact copycat of the original bisque, it is still absolutely delicious! And surprisingly easy to make.

This would be a great appetizer for a holiday or special dinner. Or add a side salad and baguette for a full meal on it’s own.
If you’ve never tried pumpkin in a savory soup, this is a wonderful recipe to start with. The pumpkin adds a velvety texture without overpowering the other ingredients, while the coconut and curry give the bisque its distinctive Caribbean-inspired flavor.

Why You’ll Love This Recipe
- Inspired by a restaurant favorite: Enjoy Caribbean-inspired pumpkin crab bisque at home.
- Easy crock pot recipe: Let the slow cooker develop all those delicious flavors.
- Creamy and flavorful: Pumpkin, coconut milk, and cream of coconut create a rich, silky base.
- A little sweet and a little spicy: Brown sugar, curry powder, Sriracha, and ginger balance each other beautifully.
- Perfect for special occasions: Serve this soup as an appetizer or as the star of a seafood dinner.

Ingredients You’ll Need
Crock Pot: You’ll want a larger crock pot for this recipe. I’m using a 7 quart crock pot.
Pumpkin puree: Use two 15-ounce cans of plain pumpkin puree, not pumpkin pie filling. Pumpkin pie filling contains added sugar and spices that will change the flavor of the bisque.
Crab meat: Use 18 ounces of real crab meat for the best flavor. Blue crab is a wonderful choice and is inspired by the crab used in Grillsmith’s version. Claw meat or drained canned crab meat also works well. Avoid imitation crab, which has a different flavor and texture.
Coco López cream of coconut: This sweetened cream of coconut adds the signature tropical sweetness to the soup. Be sure to use cream of coconut, not coconut cream, as they are different products.
Unsweetened coconut milk: Coconut milk adds richness and a subtle coconut flavor that pairs beautifully with the pumpkin and curry.
Vegetables: Finely chopped celery, onion, and red bell pepper create a flavorful base. Mince the garlic and fresh ginger so they blend easily into the soup.
Crushed tomatoes: Tomatoes provide acidity and balance the sweetness of the pumpkin and coconut.
Clam juice and vegetable bouillon: These ingredients add savory depth to the broth and complement the seafood.
Brown sugar: A little sweetness balances the tomatoes, curry, and spicy Sriracha.
Fish sauce or Worcestershire sauce: Either option adds savory, umami flavor. Fish sauce gives the soup a more seafood-forward flavor, while Worcestershire sauce is a convenient alternative.
Curry powder and Sriracha: Curry brings warmth and spice, while Sriracha adds a little heat. Adjust the amount to suit your taste.
Whole milk: Stir this in near the end of cooking to give the bisque a creamy finish.
Fresh lime juice: A squeeze of lime brightens the rich coconut and pumpkin flavors. Add it just before serving.
Garnishes: Sliced green onions and roasted pumpkin seeds add freshness, color, and a little crunch.
It’s a laundry list of ingredients; I know! I have added them all to a shopping list below so you can grab them easily and make this delicious soup!
How to Make Crock Pot Pumpkin Crab Bisque
Step 1: Add the ingredients to the crock pot
Add the chopped celery, onion, red bell pepper, minced garlic, fresh ginger, clam juice, vegetable bouillon cube, crushed tomatoes, brown sugar, fish sauce or Worcestershire sauce, Sriracha, salt, curry powder, cream of coconut, pumpkin puree, and unsweetened coconut milk to the crock pot.
Stir well, making sure the pumpkin puree and cream of coconut are fully incorporated into the liquid. The mixture will be thick at this stage.

Step 2: Slow cook the bisque
Cover and cook on LOW for 5 hours or HIGH for 3 hours, until the vegetables are tender and the flavors have had time to meld together.
Give the soup a good stir before moving to the next step.
Step 3: Let the soup cool slightly
Turn off the crock pot and let the soup cool for about 20 minutes.
This helps bring down the temperature before adding the dairy. For extra insurance against curdling, gently warm the whole milk before stirring it into the soup.
Step 4: Add the milk and crab
Gently stir in the whole milk and crab meat. Take care not to break up the crab meat too much if you want to keep some nice pieces in each bowl.
Let the mixture warm gently until heated through. Avoid bringing the bisque to a boil after adding the milk, as high heat can cause the dairy to separate.

Step 5: Finish with lime juice and garnishes
Stir in fresh lime juice to taste just before serving.
Ladle the warm bisque into bowls and garnish with sliced green onions and roasted pumpkin seeds. Serve immediately and enjoy this creamy, savory, slightly sweet, and spicy seafood soup!

Tips for the Best Pumpkin Crab Bisque
- Use plain pumpkin puree. Pumpkin pie filling will make the bisque too sweet and add unwanted spices.
- Don’t skip the cream of coconut. Coco López is sweetened and helps create the signature tropical flavor.
- Add the dairy at the end. Letting the soup cool slightly and gently warming the milk first helps reduce the chance of curdling.
- Keep the heat low after adding the milk. Avoid boiling the bisque once the milk and crab have been added.
- Adjust the spice level. Start with less Sriracha if you prefer a milder soup, then add more to taste.
- Finish with fresh lime. The acidity brightens the rich, creamy soup and balances the sweetness.
- Crab it up! I’m being pretty conservative with the crab meat in this soup because it can be pricey. Feel free to double the amount of crab meat or use bigger chunks of claw meat for more crab flavor.
- Save the garnishes for serving. Green onions and roasted pumpkin seeds add fresh flavor and texture.
- This yield a lot! Cut the recipe in half for fewer servings. There’s an option to halve the recipe in the recipe card below.

What to Serve with Pumpkin Crab Bisque
This bisque is rich and flavorful, so simple sides are a great choice.
- Crusty French bread or a warm baguette for dipping
- Garlic bread or homemade dinner rolls
- A fresh green salad with a light vinaigrette
- Grilled shrimp or a simple seafood entrée for a special dinner
- Roasted vegetables for a heartier meal
For a dinner party, serve smaller bowls as a starter before a seafood or Caribbean-inspired main course.
Variations and Substitutions
Can I use a different kind of crab meat?
Yes! Blue crab is a great choice, but claw crab meat or drained canned crab meat will also work. Grillsmith uses blue crab in their recipe. Use real crab meat rather than imitation crab for the best flavor.
Can I make this soup less spicy?
Absolutely. Reduce the Sriracha or leave it out if you prefer a mild bisque. You can always add more at the end.
Can I use chicken broth instead of clam juice?
Yes. Chicken broth or vegetable broth can work in place of clam juice, although the soup will have a slightly different flavor. Keep in mind that the recipe also calls for a vegetable bouillon cube, so taste before adding extra salt. The clam juice gives it a salty, briny seafood flavor.
Can I make this without the fish sauce?
Yes. Worcestershire sauce is an easy alternative. Both add savory depth to the soup.
Can I blend the soup?
You can blend the vegetable and pumpkin base before adding the milk and crab if you prefer an extra-smooth bisque. Use an immersion blender carefully, or transfer the soup in batches to a countertop blender. Never blend hot soup in a sealed blender. Add the crab meat after blending so it stays in tender pieces.

How to Store Leftovers
Refrigerator: Allow leftovers to cool, then transfer them to an airtight container and refrigerate within two hours. Enjoy within 3–4 days.
Freezer: Because this bisque contains dairy and crab meat, freezing may change its creamy texture. The milk can separate when thawed, and the crab may become softer. For the best results, freeze the pumpkin and vegetable base before adding the milk and crab. Thaw in the refrigerator, reheat gently, and add the milk and crab near the end.
Reheating: Warm leftovers gently in a saucepan over low heat, stirring occasionally. Avoid boiling the soup, especially after the dairy has been added. Reheat seafood leftovers to 165°F.
Frequently Asked Questions
Is pumpkin crab bisque sweet or savory?
It’s a little of both! The pumpkin, brown sugar, and sweetened cream of coconut add sweetness, while the tomatoes, crab, curry, ginger, garlic, and Sriracha create a savory, gently spicy flavor. Fresh lime juice helps balance everything.
Does this recipe taste like pumpkin pie?
No. This is a savory pumpkin soup, not a dessert soup. Plain pumpkin puree provides body and a mild earthy flavor, while the curry, tomatoes, seafood, and coconut give it a completely different taste.
Can I prepare the ingredients ahead of time?
Yes! Chop the celery, onion, and bell pepper and mince the garlic and ginger the day before. Store them covered in the refrigerator. When you’re ready to cook, add the ingredients to the crock pot and follow the recipe.
Can I cook the entire recipe on LOW?
Cook the pumpkin and vegetable base on LOW for 5 hours as directed. Add the milk and crab afterward and warm gently until heated through. The milk and crab are best added near the end rather than cooking for the full slow-cooking time.
Why did my bisque curdle?
Dairy can separate when exposed to high heat or acidic ingredients, especially tomatoes. Let the soup cool slightly before adding the milk, warm the milk first, and avoid boiling the soup afterward. If slight separation occurs, gentle stirring may help improve the texture.
What is the difference between cream of coconut and coconut milk?
Cream of coconut, such as Coco López, is sweetened and thick, while unsweetened coconut milk is thinner and adds creamy richness without the same level of sweetness. This recipe uses both for its tropical flavor and creamy consistency.
